Want great iced tea? Forget trying to cool down a hot brew, watering it down with ice cubes, and wnding up with a mess. There are only two thing you need for EASY, DELICIOUS iced tea.
#1 The Recipe: Don't heat the water. Just pour cold water directly into the pitcher you will serve from. Then add 1 tablespoon of dry tea leaves per litre of water the pitcher holds. (I.e., 2 litre pitcher = 2 tablespoons of tea, 3 litre pitcher = 3 tablespoons of tea). Put the pitcher in the refrigerator when you go to bed and when you get up the next morning you will have deliciously infused cold tea. Since you are not boiling the water or using high heat, you black tea will not have any tannic bitterness and the water will not be cloudy and stale because the oxygen was boiled out of it.
You can also use this method to make cold green teas. Your green teas will not go bitter even though you leave them in the infuser for hours because, since you are not heating the water, you will not scorch the oil in the leaves (which is what causes bitterness in over-steeped green tea).
Actually, this method works for ANY tea: black, green, oolong, white, rooibos, herbals... whatever you like.
#2 The Tool: Here is the magic that makes this method so easy.
This floating Finum Tea Basket is absolutely fantastic! Made from BPA free plastic and stainless steel mesh, the "hat" traps air and allows the infuser to float freely in your pitcher while the tea is steeping. This allows great circulation for the infusion, and hassle free brewing for you. The infuser can be easily rinsed out under the sink or popped into the dishwasher for cleaning.
